小麥不拙多少，淘凈，用清水浸三日，漉出控乾蒸熟，於□處攤放蘆蓆上，以楮葉蓋之。三五日，黃衣上，去□晒乾，簸凈入缸，用水拌勻，上靣可留三寸水，封□四十九日可熟。
